However in an effort to eat a little healthier (and hopefully shed a few pounds), I've decided I'm only going to make dessert on Sundays. I didn't get the chance this Sunday and heaven forbid I wait until next Sunday! Last night I made these yummy and super easy eclairs. I'm still working on my chocolate frosting, it's not quite as smooth as I'd like, but it's still delicious.
The recipe is below if you'd like to enjoy some tonight:
1 cup water
1/2 cup butter
1 cup flour
4 eggs
1 recipe cream filling (6oz pkg vanilla pudding instant)
1 recipe of your favorite chocolate frosting
In medium saucepan bring water and butter to boil; remove pan from heat. Immediately add flour all at once and stir vigorously with wooden spoon until mixture leaves pan and forms a ball (abt 1 to 2 min). Add eggs, one at a time, beating vigorously after each addition until smooth. Drop by heaping Tablespoonfuls onto greased cookie sheet, allowing room for expansion. Bake at 400 F for about 30 minutes or until puffed and golden. Remove and cool on wire rack while preparing filling.
To fill, cut horizontally with sharp knife, remove lid. Scoop out any soft dough. fill shells generously with pudding. Replace lids. Frost the lids with chocolate frosting of your choice. Decorate as you wish (i don't wish to) or garnish with a small edible flower. Shells and filling can be made a day ahead and refrigerated. Fill the shells the day of serving. Makes 8-10
(I usually half the recipe and it's perfect for us).
