It took me 2 1/2 - 3 hours.
I was pretty proud of myself, it looked just like the picture from Cooking Light.
I thought it tasted good, but I have to say if I'm going spend nearly 3 hours on a cake it needs to taste like a piece of heaven.
Probably something with chocolate would make it worth my time :)
I would probably make it again -
HOWEVER if I do make it again I won't be using a FRESH coconut.

That looks fabulous! Next time, I recommend hunting for flaked coconut. I needed it once upon a time for a recipe. It's much bigger than shredded coconut, but also harder to find.
